when i read about engine swaps and othe engine stuff i see stuff like 4 bolt engine or 2 bolt engine. what does that mean?

Typically that refers to the main bearing on the crank shaft. 4 bolt mains are usually used with higher horsepower motors so there is less chance of a failure. 4 bolt main motors also usually cost more.
