:D A little of topic,but lets have some good ones! Iam a huge seafood lover,i cook at home now more than i ever used too,maybe why iam getting fatter 8O ,this reciepe is not low cal,but occassionally its nice and fun to make.This is a reciepe that i tried years ago from a friend, i modified and changed some things in it (typical hot-rodder) ,and have always come back to it,and make it for my friends and back yard get to hoos. For the garlic (if you like it) PLEASE use fresh,the powder stuff is not gonna do it,and for the wine,a cheap white will do,if your not a wine fan,use some low sodium chicken stock instead. Also you can put them on the BBQ and it gives a nice smoke flavor to the shrimp,but be sure to wrap them in foil for the first 10/15 min and uncover for the rest of the cooking time. Enjoy!
[B] BAKED STUFFED SHRIMP
40 unsalted soda crackers, crushed
1 cup fresh bread crumbs
1 tablespoon fresh minced garlic
1/2 cup butter, melted :P (Unsalted is good)
1 tablespoon Worcestershire sauce
1 pinch ground black pepper
2 tablespoons grated Parmesan cheese
1/2 cup dry white wine (or low sodium chicken stock)
16 jumbo shrimp, peeled and deveined, with tails (please use the best quality one's you can get)
Directions
1. In a medium bowl, mix crushed crackers,bread crumbs and garlic. In a small bowl,blend butter and Worcestershire sauce.Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine,or stock,using only enough to hold together the mixture.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Butterfly the shrimp using a sharp knife, and arrange back side up in a large baking dish. Stuff shrimp with heaping tablespoons of the cracker mixture.
4. Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned, shrimp are opaque,and the tails have curled.
Makes 4 servings and they are great with a ice cold beer!
