Complete interior color change?

My 78 came with a "Camel" (UGH!) interior.
Body was the same (UGH again!)

The good news is that the car came with factory bucket seats, center console, "Rally" gauges, and a 350.

I intend to do a complete two-tone Blue makeover, inside and out.

The carpet I can do easily.
The dash I can replace with one of the covers sold, or maybe skin it and recover with actual vinyl/carpet?

Door panels, Hmmm, they seem to be a bit brittle and easily scratched right where your fingers hit them every time you open the door.
Has anyone tried putting real vinyl or cloth over the fake molded portion of the door panels?

I am also considering putting real vinyl over the fake vinyl plastic corner pieces to cover the scratches and ensure the pieces all match properly.

Does this make sense, or is there an easier way without spending a fortune?

Paint/dye would seem like a way cheaper and easier method.

Yes, but it won't cover scratches.

It seems the plastic is really soft. I don't know how it gets scratched in places there is no reason to touch, but it is.

The door panels are the worst, and apparently hard to replace with new ones.

The dash looks like the biggest challenge, it seems the opinion of the covers on the market is not very high.
