It all depends on where you are/ how far you're willing to drive. I live in the LaCrosse area, and I can recommend several in the area. BK Engines in Buffalo City is on the top of my list. It's a father & son business with years of experience. Brad (the owner) used to work for Winona Van Norman, back in the old days. His bread and butter is stock car engines, but he can build anything you want. He's built engines for race cars, drag cars, pulling tractors, mud boggers, street rods and stockers.
The other is Automotive Machine and Welding in New Lisbon. Joe is the owners first name (his last name is Polish and I can't even begin to try and spell it), and he's extremely meticulous. He treats every engine as if it were his own. About the only operation that he can't perform is crankshaft grinding, but he outsources that work to the Car-Quest in Marshfield.
Speaking of which. Marshfield Car-Quest is another good shop. Call and ask for Sam. They can do it all. They've even got the equipment to weld crankshafts. And they're part of Car-Quest, so there prices are competitive.
If you're looking to build an alky burner, and you're in this area, I'd call BK Engines. Brad will do just the machine work for you and/or build and dyno it. Automotive Machine and Welding, and Marshfield Carquest are both great machine shops, but they're not as inclined to do "performance" work.
In case you're wondering, I'm an automotive machinist as well. I run a government shop that builds diesel engines for the military.
Once you tell us exactly where you're located, I might even know of a shop in that area.

I've been using L.A.M racing engines in Kenosha for awile.They have been VERY good for me. I used to race street stocks at Lake Geneva until they closed down and they machined all of my motors.
