Check with a shop thats sells street rod parts, or builds street rods. They'll know the good places, and the ones to avoid.

I`m not sure about Tennessee but Brown`s Plating in Paducah, KY is one of the best anywhere! There is also Advanced Plating in Nashville I think, they are Really good too!

The shows on the Spike Powerblock use Advanced Plating all the time. Then again, if they know it's going to be on national TV maybe they do better than their average job.
