The '79 we're starting on has a full set of stainless trim, including surrounding the bed. How are these clips removed? I don't just want to pry the pieces off for fear of bending them, and most are still in nice condition.

I just pryed mine off carefully using a screw driver, they're held on by plastic clips. Those clips will break before you bend that moulding, you can find new ones on Ebay quite regularly but they're quite costly. The clips that hold the moulding over the back window are a different type, they will also break fairly easy, but be more careful, they are harder to find to replace. Also be careful with the corner pieces, they are held on by 2 screws, one under the side moulding. They are made I believe out of a cast metal and the place where the screw is under the side moulding can break off if your not careful. The old ones can be polished up pretty nice if they're not all pitted/dented up. If you have body side mouldings, the ones that run down the body and over the wheel wells, they are available new as well as the clips. The rocker panel mouldings are pretty flimsy, kinda hard to get them off without bending them. All mouldings are still available from different sources like OPGI, but they are pretty costly. If you need to replace any check on Ebay first for some savings.

I appreciate the info.
It's got all the molding I can possibly imagine. I learned the hard way on the Volvo - after carefully prying them off, bending one piece, I found they could be unbolted from the interior *duh*.
I wanted to double check before making the same mistake twice.
