Mass Air Flow Sensor
Is there a mass air flow sensor in a 1987 EC 305 V8? If there is, could it be effected by the type of air cleaner or induction system being used?

Only a MAP sensor to my knowledge. That should be mouted on the fender well for your carb cruck and is not in the airflow like same on the early injection engines.
